The knife-shaved noodles made with the willow leaf blade have a triangular cross-section, giving them a very special texture and a distinct chewiness in the center of the noodle.
But Gou Dao Mian uses another kind of tool, a small round iron piece with a hook-like end. When making it, instead of shaving the noodles, the dough is pulled down with the sharp hook.
The resulting noodles are thinner than the knife-shaved noodles, and their cross-section is no longer triangular. It shows an irregular shape close to round but not entirely.
