Gourmet: Midnight Vending
Chapter 521 - 417: Delicious, Delicious, Delicious!
The trotter cooked in the pressure cooker may look intact, but if handled carelessly, it can become mushy.
However, with the Black Spoon in hand, Chen Mo has no worries. This feeling of being one with the tool makes his operation seamless, and after reducing the sauce with high heat, the color of the trotter in the black pot deepens significantly.
"So, if we want to build a bridge between the trotter meat and noodles, we need to find a way to blend the noodle soup into the meat. How should we do that?"
The juice is there anyway. To blend in new juice, you have to remove some of the original meat juice, which is the simplest principle.
Chen Mo places the large trotter on the cutting board and thinks briefly before a plan forms in his mind.
"Anyway, let’s give it a try! Even if it fails the first time, that’s perfectly normal."
Carefully, the Black Blade cuts down, and the trotter has become utterly tender, easily coming off the bone. He chops it into cubed pieces the size of a pinky fingertip, ensuring each piece has skin, fat, and lean meat.
After chopping the meat, Chen Mo gives the black pot a quick wash and then adds vegetable oil.
The simplest way to reduce moisture is stir-frying. At four-tenths heat, he adds minced ginger and scallions to the pot. After stir-frying to release fragrance, he adds chopped onion.
There’s no denying that scallions, ginger, and onions are magical; just stir-frying them in hot oil releases quite an alluring aroma, and if pork fat is used for stir-frying, the aroma doubles.
But Chen Mo’s thoughts don’t stop there. Besides scallions, ginger, garlic, and onions, he added chopped mushrooms to the pot. As the condiments gradually heat up, the aroma becomes noticeably more complex.
"Now with the thoroughly cooked trotter meat, back in the pot over low heat to slowly stir-fry, letting it gradually lose moisture!"
While stir-frying, he adds soy sauce and yellow bean paste, turning all the meat chunks to a sauce color.
After a round of stir-frying, a noticeable amount of juice appears in the pot, not just the water from inside the trotter, but also the fat that couldn’t be extracted by simmering.
One would think there’s no need for more cooking—these meat cubes could be scooped out right now and would definitely be a top-tier delicacy!
Cautiously, Chen Mo transfers all the trotter cubes into a bowl, and finally, there’s the imagined bridge!
He pours the Japanese dashi brought from Granny’s house into the bowl to just cover the meat cubes, then places the bowl on the induction cooker set to a 60-degree warming state.
"By soaking at low temperature, I hope the Japanese dashi melds smoothly with the moisture-reduced trotter meat, saving the trouble of adding dashi to the noodle soup—though it’s uncertain if it will work!"
In fact, Japanese dashi is quite a special broth.
Its biggest feature is its subtle umami, never overpowering the dish, but when it melds with the meat cubes, it simply enhances the meat’s inherent umami without offering a distinct flavor.
Once the meat topping is done, it’s time to cook the noodles!
At this moment, Granny finally finishes touring Chen Mo’s food truck.
Actually, she finished over twenty minutes ago, but the inside of the food truck was indeed novel; after all, most people may not get the chance to properly see the inside of a food truck in their lifetime.
So Granny couldn’t resist using Chen Mo’s simple equipment inside the truck to brew a cup of tea for herself, sitting by the window seat, enjoying tea for a whole twenty minutes before reluctantly cleaning the tea set and stepping down.
"Chen Mo, your name is Chen Mo, right?"
Seeing the Chinese characters on the side of the food truck, Granny asks with a smile, "I just brewed a cup of tea in your truck, so I stayed longer, sorry about that."
Tea?
Chen Mo recalls that he doesn’t have any fine tea on his truck. He only bought some ordinary tea back in Dongyang for making tea eggs.
"It’s great that you didn’t mind the poor quality of my tea; I’ll start cooking the noodles now!"
"Is it finished so quickly?" Granny wants to see how Chen Mo is cooking, but her height makes it hard to see inside the food truck even on tiptoes.
Seeing this, Chen Mo opens the food truck’s door and invites her in, "Why don’t you come in and take a look?"
Granny boards the food truck and is stunned once again.
"Wow! I didn’t expect your food truck to look small from the outside but has such complete tools inside."
Although it can only allow one person to walk freely inside, if two people walk towards each other, they have to move sideways. 𝒇𝓻𝓮𝓮𝙬𝙚𝒃𝒏𝓸𝙫𝒆𝙡.𝓬𝓸𝒎
But the food truck is indeed meant for just the owner to operate inside, and this space isn’t too small.
After curiously surveying everywhere for a while, Granny’s gaze falls on the bowl of trotter cubes soaking in dashi, "Is this your meat topping?"
Chen Mo nods, "Yes."
"This works, but this kind of meat cube is quite costly, you know."
She has tried it before since adding dashi already costs enough. Even when she sold top-notch Tan Zai noodles at the night market for 30 yuan a bowl, it was considered a high price.
If using this kind of meat cube, the costs would rise further. How much would have to be charged then?
But cost is precisely something Chen Mo never considers.
Why worry about high costs?
If the cost is high, sell it at a higher price. If the cost is low, sell it cheaper.
Expensive and cheap foods each have their own positions; creating them is the ultimate goal.
