Because if Ethan hadn't staged this performance in front of her, she really did intend to kill all the flesh-and-blood creatures present; there was no misunderstanding about it.
Having lived through the Crimson Epoch, she understood that this was the only way to deal with the infected, and also a release for their distorted souls.

"Let's now set aside the grand concepts of the Crimson Plague, Evil God, True God, and suppose this is a dog you met by the roadside. The words were at the tip of her tongue, but Mary suddenly froze.
That was the standard answer for followers of Life Divine Teachings, as the human body and soul are incredibly complex, and any research involving the distortion of body and soul is strictly forbidden by doctrine, which would undoubtedly lead to unimaginable consequences.
But... if abandoning the Church Court's doctrines and answering Ethan's question from an alchemist's perspective.
The answer had to be affirmative.
